Sun Dried Tomato Spread

Sun-Dried Tomatoes [GourmetStore.com] (blanched in boiling water, drained)

2 Tablespoons
|
Roasted Red Peppers (bottled is fine)
|

1/2 cup
|
Walnuts [GourmetStore.com] (toasted in oven for 5-10 minutes, 375º)
|
|
1 Teaspoon
|
Shallot (chopped)
|
|
1 1/2 Tablespoon
|
Red Wine Vinegar
|
|
2 Tablespoons
|
Water
|
|
1/4 Cup
|
Olive Oil
|
Directions:
Blend all ingredients, except oil, in a blender or food processor.
When they are blended into a paste, slowly add the oil, with the blender running.
Add salt to taste.
