Sun Dried Tomato Spread


Amount Ingredient
1/4 cup Sun-Dried Tomatoes (blanched in boiling water, drained)
2 Tablespoons Roasted Red Peppers (bottled is fine)
1/2 cup Walnuts (toasted in oven for 5-10 minutes, 375º)
1 Teaspoon Shallot (chopped)
1 1/2 Tablespoon Red Wine Vinegar
2 Tablespoons Water
1/4 Cup Olive Oil

 
Directions:

    Blend all ingredients, except oil, in a blender or food processor. When they are blended into a paste, slowly add the oil, with the blender running. Add salt to taste.
