Sun Dried Tomato Onion Chutney

dry white wine

red wine vinegar

dried apricots, thinly sliced

Sun-Dried Tomatoes (blanched in boiling water, drained, chopped)

Directions:
Melt butter in skillet and cook onions, sugar, salt, pepper and red pepper flakes, covered over low heat for about 30 minutes (stir occasionally). Add wine, vinegar
apricots and Sun-Dried Tomatoes, then continue to simmer, uncovered, for 20 - 30 minutes. Serve at room temperature.
This condiment is ideal on roasted meats or chicken, or serve as a side with cheese and crackers.
