Sun Dried Tomato Onion Chutney


Amount Ingredient
3 medium onions, slivered
3 Tbs. butter
1/3 cup sugar
1/2 tsp salt
1/4 tsp black pepper
1/8 tsp red pepper flakes
1/2 cup dry white wine
1 Tbs. red wine vinegar
1/4 cup dried apricots, thinly sliced
3/4 cup Sun-Dried Tomatoes (blanched in boiling water, drained, chopped)

 
Directions:

    Melt butter in skillet and cook onions, sugar, salt, pepper and red pepper flakes, covered over low heat for about 30 minutes (stir occasionally). Add wine, vinegar apricots and Sun-Dried Tomatoes, then continue to simmer, uncovered, for 20 - 30 minutes. Serve at room temperature.

    This condiment is ideal on roasted meats or chicken, or serve as a side with cheese and crackers.
