Cannellini Beans & Sun Dried Tomatoes

1 lb. Cannellini beans [GourmetStore.com]
1 lb. turkey sausage, sliced
2 oz. Sun-Dried Tomatoes, diced [GourmetStore.com]
2 large onions, chopped
2 cloves garlic, minced
1 green pepper, chopped
Parsley [GourmetStore.com]
Bay leaf [GourmetStore.com]
Thyme [GourmetStore.com]
Chicken broth
 
Directions:

    Rinse beans then cover with chicken broth. Add chopped onions, garlic and green pepper, sliced turkey sausage, and diced sun dried tomatoes and seasonings. Bring to a boil. Lower heat and simmer for 2 hours or until soft. Serve over rice or polenta.
